How do you pronounce Xocolate?
Just like "chocolate" but with a soft "sh" sound instead of a "ch." Our name is inspired by the Aztec word for chocolate, xocolatl, as a nod to chocolate's latin roots.
What makes it Vegan?
Dark chocolate is naturally vegan, it’s just the cream in the center that adds animal products to the mix. Instead of cream we use coconut milk, fruit, agave nectar, and/or nuts.
What gives it that color?
We paint the pieces with a mineral-based cake decorating powder. It is non-toxic and approved for food use.
How dark is it?
Our blend is about 70% cacao. We do the occasional white and milk chocolate as well, making sure they’re never overly sweet.
What are the centers like?
Most are truffles, some are caramels, a few are solid. None are sickeningly sweet fondant centers, guaranteed.
Is there really an olive in the Kalamata Olive Caramel? The center is a blend of organic extract of Kalamata olive in a salted caramel. There is not a whole olive in there, but there is definitely an olive flavor.
Where is it made?
We hand-make all our chocolates at our shop in Berkeley. 1709 Solano Ave, Berkeley, 94707. Call 510.525.XOCO for store hours.
Do you make your own chocolate from bean to bar?
No, we buy couverture and make our own bonbons out of it. Bean to Bar is a project we’re working on, though.
Where does your couverture come from?
We blend a few different fine chocolates, mostly from Venezuela, Madagascar, Ghana, and Dominican Republic.
Basics:
Is it Natural?
Yes, 100%. No artificial flavors, preservatives, or trans fat allowed. No High Fructose Corn Syrup either.
Is it Organic?
Not completely. We use organic ingredients like milk, fruit and spices in our chocolates, but the chocolate itself is not organic (it’s still hard to find a really great tasting organic chocolate).
Is it Fair Trade?
Yes. The man who manufactures our base chocolate is one of the founders of the World Cocoa Foundation (WCF) which supports cacao farmers and their families worldwide. WCF programs raise farmer incomes, encourage responsible, sustainable cacao farming and strengthen communities. Our man is currently working directly with West African governments to set up accountability systems for cacao labor practices. For more info visit www.WorldCocoaFoundation.org
